   Casabe is a thin and crunchy flatbread made out of cassava flour. It is a pre-Columbian dish typical of many Caribbean countries and to honour that heritage an experience called "Ruta del Casabe" was created in Monción, Dominican Republic. The "Ruta del Casabe" (The Cassava Bread's Route)? is an experience based in the concept of Industrial tourism, and as such it allows visitors to discover the history and evolution of the casabe, as well as seeing and taking part in its production process in 3 companies of different scales. The visit provides a complementary understanding of the past, present of future of this staple of the Insular Caribbean gastronomy. As a touristic attraction, the Ruta del Casabe mixes tradition with industrial innovation in both a local and an international scale. At the same time it is promoting the discovery and appreciation of the cultural and historical value of this ancient gastronomic product that is both gluten-free and vegan.    Tuve la dicha de visitar la Ruta del Casabe junto a los Anfitriones de Monción y quedé gratamente sorprendida con el dinamismo, la energía y la alegría de este equipo de jóvenes. Son personas a las cuales se les nota un amor profundo por su municipio, su provincia, su región y su país. Son muy atentos y, durante mi visita, se encargaron de hacer que todo saliera bien y que nos sintiéramos realmente bienvenidos. See more..
